Holiday Recipe Marathon: Glazed Pork Loin

 



GLAZED PORK LOIN
1 lb Pork Tenderloin
2 cups Cider Vinegar
4T Stone Ground Mustard
1 t Thyme    
1 t Black Pepper
1 1/2 t Sea Salt    
2 T Garlic    
1 cup Olive Oil

METHOD:
In a large mixing bowl, combine herbs with liquids. Place tenderloin in this mixture and marinate for 3-4 hours. Bring leftover marinade to a boil, set aside to cool. Pat pork dry, season with salt, pepper, thyme, and garlic. In a large pan, sear pork on all sides, set aside. In a 400º oven, roast pork for 35-40 minutes, basting every 10 minutes with the boiled marinade. Cook until pork has internal temperature of 140º Pull tenderloin when fully cooked, tent for ten minutes. Let rest uncovered for 5 minutes. Slice and serve. (Serves 2-3)
