Holiday Recipe Marathon: Prime Rib Roast and Yorkshire Pudding

PRIME RIB ROAST
6lb Rib Roast
1 tsp Sea Salt
1 tsp Black Pepper
1 Tbsp Garlic
2 Tbsp Fresh Thyme
METHOD:
Combine thyme and garlic. Rub on roast. Season roast with salt and pepper. Place in roasting pan fat side up and cook at 325º for 3-3.5 hours. Remove from oven, let stand for 20-30 minutes. Carve and serve. (Serves 6-8)

YORKSHIRE PUDDING
1 Cup AP Flour
1/2 tsp Sea Salt
Pinch Black Pepper
2 Eggs
2t Baking Powder
2 Cups Milk
1/2 Cup Cold Water
4 T Reserved fat from roast
METHOD:
In a large mixing bowl, combine sifted flour and baking powder with salt and pepper. Make a hollow center in the flour mixture, add eggs. Gradually add milk, beat until smooth with an electric mixer. Refrigerate for 30 minutes. Preheat oven to 425º. In an 8x12 inch baking pan, add reserved fat from roast. Add water to batter, pour batter into baking dish. Bake for twenty minutes. (Serves 8)
