Holiday Recipe Marathon: Happy Cake

 

HAPPY CAKEhappy cake
(Makes two 8 inch rounds)

1 1/2 cup AP Flour
1/4 cup Cornstarch
2 1/2 t Baking Powder
1/2 t Salt    
1 cup Sugar
1/4 lb Butter
1/2 cup + 1T Milk
1 1/2 t Vanilla
1/4 t White Vinegar
1/3 cup Egg Whites

In a large mixing bowl, combine flour, cornstarch, baking powder and salt. Set aside. Combine sugar and softened butter in a mixer. Whip until thoroughly blended. Add remaining wet ingredients to mixer. When those have been incorporated, add dry mix. Whip on high for 20 seconds. Split between two 8 inch round pans, bake at 350º for twenty minutes.
FROSTING:
Combine 3/4 lb of butter, 1/2 t vanilla, and 4 c powdered sugar in mixer.
