Lauralyn Rosenberg and Mason Puntell of Rhythm Bakery make real sourdough bread with local ingredients right here in Viroqua, WI. They moved from Madison, WI to Viroqua drawn by the local food culture and the opportunity to take over the operation of friends and local bread makers, Natalie and Matt of Bard Bread.

They named their bakery rhythm, as it describes the rising and falling of their sourdough starter and the ebb and flow of life. They put a lot of thought into the words behind their loaves. For example, their lightest loaf is Nimbus named after the light and fluffy cloud while the whole wheat Nausicaa Loaf is denser. Symmetry is their Sandwich Bread.

Lauralyn and Mason’s shared love of food brought them together.  They met dumpster diving in Madison, WI while participating in an event through the Slow Food Initiative that was meant to call attention to food waste. This meeting turned into a night long conversation that ended with the knowledge that someday they would start a business based on locally sourced food.

While in Madison, they worked at the Underground Collective, a creative food passion project where Laurlyn was a pastry chef. They also ran a hand pulled noodle pop up shop called Elemeno Noodles that combined fresh local ingredients with an authentic Chinese noodle making technique that Mason learned while traveling in China. It was with a desire to find locally sourced organic flour that would produce authentic noodles, that Mason began talking with John Wepking of Meadowlark Farms. Together they found the perfect blend that allowed Mason to use 100%  organic and locally sourced ingredients.

Lauralyn and Mason love talking about food and the products they make and look forward to talking to and meeting their customers at the Viroqua Farmers Market. They also appreciate selling their products at the Co-op and knowing they have a year-round outlet for their bread. Rhythm Bakery delivers fresh, delicious bread and crackers to our Co-op on Monday, Wednesday and Fridays.
