No-Bake Peanut Butter Cereal Bars

These bars make everyday cereal into a crunchy, peanut-buttery snack that’s easy to pack in a lunch box or backpack.
Ingredients
- 3 cups oat O’s or cereal squares
- 3/4 cup creamy peanut butter
- 1/2 cup honey or agave syrup
- 1/2 teaspoon vanilla
- 1/2 cup chocolate chips, optional
Preparation
- Line an 8-by-8-inch baking pan with parchment paper, making sure the paper extends over the sides of the pan, and set aside. Place the cereal in a large bowl.
- In a medium saucepan, combine the peanut butter, honey or agave syrup and vanilla and stir to mix. Place over medium heat and stir until the mixture comes to a full boil, about 4 minutes, scraping the bottom so it won’t stick.
- Pour over the cereal and stir with a spatula to coat the cereal.
- Scrape into the prepared pan and spread quickly, then press firmly into the pan to make a smooth top.
- Refrigerate for at least 2 hours to harden. If desired, melt the chocolate chips and drizzle over the cooled bars, and refrigerate until the chocolate hardens.
- Use the parchment to lift out the bars, place on a cutting board and slice 3-by-3 to make 9 bars.
Serving Suggestion
