No-Bake Peanut Butter Cereal Bars

These bars make everyday cereal into a crunchy, peanut-buttery snack that’s easy to pack in a lunch box or backpack.

Ingredients

  • 3 cups oat O’s or cereal squares
  • 3/4 cup creamy peanut butter
  • 1/2 cup honey or agave syrup
  • 1/2 teaspoon vanilla
  • 1/2 cup chocolate chips, optional

Preparation

  1. Line an 8-by-8-inch baking pan with parchment paper, making sure the paper extends over the sides of the pan, and set aside. Place the cereal in a large bowl.
  2. In a medium saucepan, combine the peanut butter, honey or agave syrup and vanilla and stir to mix. Place over medium heat and stir until the mixture comes to a full boil, about 4 minutes, scraping the bottom so it won’t stick.
  3. Pour over the cereal and stir with a spatula to coat the cereal.
  4. Scrape into the prepared pan and spread quickly, then press firmly into the pan to make a smooth top.
  5. Refrigerate for at least 2 hours to harden. If desired, melt the chocolate chips and drizzle over the cooled bars, and refrigerate until the chocolate hardens.
  6. Use the parchment to lift out the bars, place on a cutting board and slice 3-by-3 to make 9 bars.

Serving Suggestion

Serve as an afterschool snack, a lunch box dessert or bring to a potluck to share — these are guaranteed to be a hit!
