Fig and Goat Cheese Salad

For a salad that’s more than just greens, try this one, with chewy, golden brown dried figs, creamy goat cheese and crunchy pistachios. The dressing is quick to make, with a kiss of honey to accentuate the sweetness of the fruit.
Ingredients
- 1 tablespoon balsamic vinegar
- 2 teaspoons honey
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 ounces mixed greens
- 6 dried Calimyrna figs, stemmed and sliced
- 3 ounces chevre cheese, crumbled
- 1/4 cup shelled pistachios, toasted and chopped
Preparation
- In a jar or glass measuring cup, combine the vinegar, honey, olive oil, salt and pepper and shake or whisk to mix. Reserve.
- On four salad plates, place the greens, then top with sliced figs and chevre. Drizzle with dressing and sprinkle with pistachios.
Serving Suggestion
This salad is hearty enough to be a light meal for two or a side salad for four.
