Fig and Goat Cheese Salad

For a salad that’s more than just greens, try this one, with chewy, golden brown dried figs, creamy goat cheese and crunchy pistachios. The dressing is quick to make, with a kiss of honey to accentuate the sweetness of the fruit.

Ingredients

  • 1 tablespoon balsamic vinegar
  • 2 teaspoons honey
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 ounces mixed greens
  • 6 dried Calimyrna figs, stemmed and sliced
  • 3 ounces chevre cheese, crumbled
  • 1/4 cup shelled pistachios, toasted and chopped

Preparation

  1. In a jar or glass measuring cup, combine the vinegar, honey, olive oil, salt and pepper and shake or whisk to mix. Reserve.
  2. On four salad plates, place the greens, then top with sliced figs and chevre. Drizzle with dressing and sprinkle with pistachios.

Serving Suggestion

This salad is hearty enough to be a light meal for two or a side salad for four.
